I wanted to cook with fresh veggies including ones I've never cooked with before like Pearl Onions and Bell Peppers. So here is my delicious spur of the moment Sausage and Veggie Soup! Ingredients: 2 tsp Olive Oil 20 Pearl Onions 3 Cloves Garlic, minced 1 cup Sausage, diced 2 tsb Thyme 1 Bay Leaf 3 cups chicken broth 1 cup beef broth Salt to taste 1 tsp Pepper 1/2 Yellow Bell Pepper, diced 1/2 Red Bell Pepper, diced 1 cup Carrots, roughly chopped 1/2 cup Corn 3 large Potatoes, diced 2 tbs Tomato Paste 2 tbs Red Wine Before you start
In 2014 we were determined to have a perfect view of the Coronado's Independence Day Parade. The year before we woke up too late, and had to stand at a corner, craning to see. So my father had gotten up early, and staked out premo places outside of our hotel so we could see the parade in comfort. We had picked up beach chairs the day before, had a cooler of food, blankets, and ample sunscreen. We were prepared! And it was a perfect spot! We watched as floats and military bands went by. I mostly stuck to local activities this month. I went and saw the broadway show Beauty and the Beast. The costumes and songs were well done, but the jokes were a bit jarring. I forgot that it was mostly aimed at children, so the jokes had to be explained very clearly so the kids could get it. But it was still fun. I also went to the Denver Flea with my friend Roma. We went last year, but this year it was so much bigger! It was a hot but fun day. I ended up getting some Hibiscus drink mixer and tangerine-rosemary lotion.
