I wanted to cook with fresh veggies including ones I’ve never cooked with before like Pearl Onions and Bell Peppers. So here is my delicious spur of the moment Sausage and Veggie Soup!

Ingredients:

  • 2 tsp Olive Oil
  • 20 Pearl Onions
  • 3 Cloves Garlic, minced
  • 1  cup Sausage, diced
  • 2 tsb Thyme
  • 1 Bay Leaf
  • 3 cups chicken broth
  • 1 cup beef broth
  • Salt to taste
  • 1 tsp Pepper
  • 1/2 Yellow Bell Pepper, diced
  • 1/2 Red Bell Pepper, diced
  • 1 cup Carrots, roughly chopped
  • 1/2 cup Corn
  • 3 large Potatoes, diced
  • 2 tbs Tomato Paste
  • 2 tbs Red Wine

Before you start make sure to cut all veggies and remove papery skin from the onions. Then add oil, onions and minced garlic to a medium-hot pan. Allow the onions to caramelize before adding cut pre-cooked sausage to the mix to brown a bit.

Next add beef broth and potatoes, and bring to a boil. Add in thyme and Bay leaf, salt and pepper. Next add in the Chicken Broth, red wine, and tomato paste and carrots. Cover, and let it cook for about 10 minutes. Next add in the remaining vegetables and turn down the heat to simmer. Check periodically and serve once the potatoes can be pierced with a fork.
