If you find yourself at Universal Studios for the holidays be sure to try out the offering at the Three Broomsticks: the special Christmas Dinner. It is a turkey and stuffing dinner, with roasted potatoes, pig in a blanket, braised cabbage, and a mix of roasted veggies and chestnuts, with a spiced citrus cranberry sauce.  I really enjoyed the veggies and the flavor of everything was really nice. I also got the Toffee Pudding, which was delicious and complimented the hot Butterbeer well. But be warned it is very sweet, so the ice cream is definitely needed to calm the flavors. I

By |December 21st, 2016|Categories: Food, Food & Drink, Recipe|Tags: , , , , , , , |0 Comments

In my family we have a tradition of having spiral sliced ham and these cheesy potatoes for Christmas day. Its also one of my favorite pot-luck things to make in a crock pot. You can easily make this either as a casserole or in a crock pot, and the preparation is essentially the same. I rarely have all the ingredients, kitchen items, or patience to follow a recipe exactly. This is usually my downfall. I had some Rainbow Carrots, Parsnips, and Chicken that I needed to cook before they went bad and I didn't feel like preparing them exactly how I had before. I decided to experiment. What came out of the slow cooker tasted like heaven. Ingredients: 2 Chicken Breasts 6 Large Rainbow Carrots 3 Parsnips 1 Cup Orange Juice 1/2 Cup Honey 2 tbsp Chicken Stock 5 tbsp Ras el Hanout 3 Cloves Garlic 1 tsp Olive Oil or Vegetable Oil 2 tbsp Butter Salt Pepper

Local Treats: The Cookie Lady

By |September 15th, 2015|Categories: Food, Food & Drink, Local, Travel|Tags: , , , , , , , , , , |0 Comments

The Cookie Lady has a wide Variety of cookies, listed out in cute place-cards in front of the baskets. I had heard rumors since I started working in Downtown Denver, of the infamous "Cookie Lady". Without much to go on, my mind ran rampant and likened her to the "Soup Nazi" of Seinfeld fame. So one day, when I smelled the most delicious fresh-baked-goods scent wafting through the air, I followed it down to the Santa Fe Cookie Company. But alas, that first visit was for nought. She was out of cookies! I nervously waited around, watching the

Ingredients When you forget ingredients at the store, you have to come up with another plan. I was going to do loaded baked potatoes for 4th of July, but after forgetting butter and sour cream I decided to make impromptu Potato Salad! Only problem was...I've never attempted potato salad. So I grabbed some fresh herbs from my herb garden and started whipping them together with mayo and a Lemon Juice. Mix all the ingredients minus the potatoes to taste. The List: Black Pepper Fresh Dill Garlic Fresh Chives Fresh Rosemary Bacon Lemon Potatoes Salt Mayo Olive

Recipe: Apple Chips

By |July 1st, 2015|Categories: Food, Food & Drink, Recipe|Tags: , , , , , , |0 Comments

One of my favorite healthy snacks to make are Apple Chips. They are so simple, all you really need is parchment paper, apples, cinnamon, and a mandolin slicer. Cut the apples as thin as you can get without them coming out like paper. (Thicker slices will be less crunchy.) I use a mandolin slicer since it makes this step so quick! Next, put the apples down on parchment paper on a baking sheet. You have the option of sprinkling cinnamon to give it another layer of flavor. Next preheat the oven to 200 degrees, and place the sheet in. You'll
