In my family we have a tradition of having spiral sliced ham and these cheesy potatoes for Christmas day. Its also one of my favorite pot-luck things to make in a crock pot.

You can easily make this either as a casserole or in a crock pot, and the preparation is essentially the same.

Here is what you’ll need:

  • 32 oz frozen hash browns (thawed if making in a crock pot & you plan on eating quickly)
  • 2 cups sour cream
  • 2 cans cream of chicken soup
  • 1/2 stick butter, melted
  • 1 tablespoon of salt
  • 1 1/2 cup onions, diced into small squares
  • 2-3 cups grated cheddar cheese

For the Topping:

If you are making this in a crock pot, add this at the end as a garnish.

  • French Fried Onions

If you are making as a casserole, mix these items to a bowl and add to the top before baking.

  • 1/2 stick butter, melted
  • 4 cups corn flakes

Steps:

  1. Mix together everything above and place into a greased casserole dish/crock pot.
  2. If making in a casserole dish, add topping.
  3. Bake at 350 degrees for 1 hour until topping is crispy and potatoes no longer firm. / Turn crockpot on to high. If frozen it can take a few hours to cook. If thawed cook until hot and the mixture bubbles.
  4. Take out and serve. / Add Topping to individual bowls if cooked in a crock pot.

Serves about 8.
