In my family we have a tradition of having spiral sliced ham and these cheesy potatoes for Christmas day. Its also one of my favorite pot-luck things to make in a crock pot.
You can easily make this either as a casserole or in a crock pot, and the preparation is essentially the same.
Here is what you’ll need:
- 32 oz frozen hash browns (thawed if making in a crock pot & you plan on eating quickly)
- 2 cups sour cream
- 2 cans cream of chicken soup
- 1/2 stick butter, melted
- 1 tablespoon of salt
- 1 1/2 cup onions, diced into small squares
- 2-3 cups grated cheddar cheese
For the Topping:
If you are making this in a crock pot, add this at the end as a garnish.
- French Fried Onions
If you are making as a casserole, mix these items to a bowl and add to the top before baking.
- 1/2 stick butter, melted
- 4 cups corn flakes
Steps:
- Mix together everything above and place into a greased casserole dish/crock pot.
- If making in a casserole dish, add topping.
- Bake at 350 degrees for 1 hour until topping is crispy and potatoes no longer firm. / Turn crockpot on to high. If frozen it can take a few hours to cook. If thawed cook until hot and the mixture bubbles.
- Take out and serve. / Add Topping to individual bowls if cooked in a crock pot.
Serves about 8.
