I love this recipe as the end result is a nice warm salad that reminds me of a light Caesar salad.
Ingredients:
1 Head of Romaine Lettuce
1 Tablespoon Olive Oil
Course Sea Salt
Pepper
1/4 Cup freshly Grated Parmesan Cheese
1 Tablespoon Bacon Bits
1 Tablespoon Tzatziki Sauce
Directions:
Step 1: Preheat grill to a high heat.
Step 2: Remove the large leafy outer layers of the Romaine and then wash the remaining head of lettuce. Pat dry with a paper towel and then cut lengthwise in half.
Step 3: Drizzle the outside with olive oil, salt, and pepper. Then flip over and do the same on the inside.
Step 4: Place the Romaine flat side down on the hot grill. Leave on for around 3-5 minutes until it gets a nice char. Then flip onto one of the curved sides and let it grill for 2-3 minutes, then finally flipping it to the other curved side for another 2-3 minutes.
Step 5: Take off grill and add cheese immediately so it can melt. Next add your bacon bits and then drizzle with tzatziki sauce. Serve quickly while it is so warm.
Note, do not eat the last 2 inches from the base as this is where dirt can collect. I don’t recommend cutting this off at any point as the lettuce would fall apart and no longer have that “Grilled Romaine Steak” effect.
