These are my go-to for any cookie exchange! But beware, Paradise Bars are very addicting!
Ingredients:
3 cups finely ground cinnamon graham crackers
1/8 cup white sugar
1/8 cup brown sugar
1 teaspoon cinnamon
1 2/3 sticks unsalted butter, melted
1 1/2 cup pecan pieces
1/2 cup semisweet chocolate chips
1/2 cup milk chocolate chips
1 can sweetened condensed milk
1 1/2 cups sweetened shredded coconut
Parchment Paper
Rimmed Baking Sheet or Pan
Step 1:
Preheat oven to 375 degrees. Splash a rimmed baking sheet with water evenly, and then line with parchment paper.
Step 2:
Using a food processor finely ground cinnamon graham crackers and any hard brown sugar. Mix in ground crackers, sugar, and cinnamon into bowl.
Step 3:
Melt butter and add to mixture, coating everything evenly.
Step 4:
Press mixture into the pan, making sure it is evenly spread and gets into the edges.
Step 5:
Bake for 10 minutes, rotating the pan halfway though. Mixture should be firm and crust like.
Step 6:
Take out of oven and cool for 20 minutes.
Step 7:
Evenly spread crust with pecans and chocolate.
Step 8:
Pour condensed milk over the top evenly coating to cover it all. Then spread coconut over the mixture.
Step 9:
Bake for 10-15 minutes, until the coconut is toasted and the condensed milk has started to caramelize.
Step 10:
Allow to cool and cut into equal sized bars. If you need to serve it quickly put in freezer for 5-10 minutes for easier cutting. This will allow it to be cool enough to cut, but still have gooey chocolate!
