Recipe: Sausage & Vegetable Soup

I wanted to cook with fresh veggies including ones I've never cooked with before like Pearl Onions and Bell Peppers. So here is my delicious spur of the moment Sausage and Veggie Soup! Recipe: Moroccan Honey-Orange Chicken with Vegetables

I rarely have all the ingredients, kitchen items, or patience to follow a recipe exactly. This is usually my downfall. I had some Rainbow Carrots, Parsnips, and Chicken that I needed to cook before they went bad and I didn't feel like preparing them exactly how I had before. I decided to experiment. What came out of the slow cooker tasted like heaven. Ingredients: 2 Chicken Breasts 6 Large Rainbow Carrots 3 Parsnips 1 Cup Orange Juice 1/2 Cup Honey 2 tbsp Chicken Stock 5 tbsp Ras el Hanout 3 Cloves Garlic 1 tsp Olive Oil or Vegetable Oil 2 tbsp Butter Salt Pepper

Recipe: Grilled Romaine Salad

I love this recipe as the end result is a nice warm salad that reminds me of a light Caesar salad. Ingredients: 1 Head of Romaine Lettuce 1 Tablespoon Olive Oil Course Sea Salt Pepper 1/4 Cup freshly Grated Parmesan Cheese 1 Tablespoon Bacon Bits 1 Tablespoon Tzatziki Sauce Directions: Step 1: Preheat grill to a high heat. Step 2: Remove the large leafy outer layers of the Romaine and then wash the remaining head of lettuce. Pat dry with a paper towel and then cut lengthwise in half. Step 3:  Drizzle the outside with olive oil, salt, and pepper.

Recipe: Winter Spiced Cider

One of my favorite winter drinks is Hot Spiced Cider! But this is the firs time I tried making it myself. Ingredients When you forget ingredients at the store, you have to come up with another plan. I was going to do loaded baked potatoes for 4th of July, but after forgetting butter and sour cream I decided to make impromptu Potato Salad! Only problem was...I've never attempted potato salad. So I grabbed some fresh herbs from my herb garden and started whipping them together with mayo and a Lemon Juice. Mix all the ingredients minus the potatoes to taste. Recipe: Apple Chips

One of my favorite healthy snacks to make are Apple Chips. They are so simple, all you really need is parchment paper, apples, cinnamon, and a mandolin slicer. Cut the apples as thin as you can get without them coming out like paper. (Thicker slices will be less crunchy.) I use a mandolin slicer since it makes this step so quick! Recipe: Fried Rice

I'm trying to cook more. The problem with me is that I'm not exact. I tend to get to excited and just dive on in. Which is how I ended up with too much rice. I had made rice to go with a frozen stir fry meal I had. I didn't measure the rice, I put in what I thought was the right amount...but it was way too much. I randomly decide to sub water for beef broth...as that is all I had and I wanted a little more flavor out of my jasmine rice. Well it turned out pretty good.
